How else am I going to request a C# translation for this Kata?

Slowly trimming the string from the start is going to hurt performance, and is unnecessary. Your words are split with either a ' ', or with a '-', so you can just use those two characters as the delimiters when splitting the string into multiple words, and process those instead, without touching the original string.
